The Aparicio family purchased the Tortilla Factory in 1986 and expanded it from a favorite take-out outlet to a restaurant that could seat 40 diners. The loyal following grew, and Aparicio's expanded again to accommodate up to 75. Word of mouth and numerous rave reviews from restaurant critics all over Texas have drawn increasingly enthusiastic crowds- most of whom instantly became regulars- and have prompted Juan Aparicio to pull out all the stops and expand his business into the full-service Mexican restaurant he and his wife, Martina, have always dreamed of owning.
